Tortilla Addict

I love meals that involve tortillas!  Wraps, fajitas, quesadillas, breakfast burritos, you name it.  I used to eat a ham and cheese quesadilla every day as my after-school snack.  I took it to the next step during college, tortillas were my one staple food - I would even eat PB&J on my tortillas.

Fortunately, I've grown past my tortilla addiction.  But sometimes, you just have to revert back to an old favorite, or give it a new twist.

This combination of flavors and textures is definitely worth repeating!  Can you believe I pulled off another vegetarian meal without any complaints?

Mushroom & Asparagus Wrap


In a skillet, sautee mushrooms, onions and garlic.


In another skillet, sautee asparagus, sliced tomatoes, garlic and sprinkle with veggie seasonings.


Prepare your tortillas with a layer of avocado and a handful of shredded cheese.

Next, simply pile on the asparagus and tomatoes, followed by the mushrooms and onions!


Wrap it up, or eat it like a taco, however you prefer!


Don't forget dessert! I had a serving of vanilla yogurt, topped with blueberries, blackberries, crumbled graham crackers, and peanuts!

Did you notice anything missing in my dessert?  That's right - chocolate.  No, I didn't go all day without my chocolate fix - I actually had an Attune bar for a snack earlier and it satisfied my daily craving!


These are probiotic bars.  Most everyone has heard of antibiotics, whose job is to kill bad bacteria.  A probiotic is basically the exact opposite of antibiotics - it is a dose of live microorganisms that are healthy for your digestive and immune systems.  Attune bars have a very reasonable amount of calories, 3-4g of fiber, and are obviously great sources of probiotics and calcium!  There's also only a few grams of sugar!

Of course, don't expect it to taste like a hunk of Dove chocolate (my favorite).  My personal opinion of the Attune bar is that it tastes healthy and chocolatey, too.  If you consider the health benefits, this is a great option to consider when you're craving a snack.

Vegetarian Night

I've been really busy at work this week.  Fortunately, my hard work earned me a free lunch!  Today, we had Murphy's Deli lunch boxes delivered to our office since we were working thru lunch.


I ordered a Reuben - corned beef of pastrami, swiss cheese, sauerkraut and russian dressing served on toasted rye bread.


The gourmet lunch box also included a deviled egg, pickle, chips and a cookie!


The sandwich was delicious with a little bit of Thousand Island dressing drizzled on top.


For dinner last night, we executed Operation clean-out-the-fridge.  This resulted in eating a bunch of leftover side dishes.


Tortellini with tomato sauce, corn on the cob, sweet potato, and green beans!


We deemed it Vegetarian Night when we realized something was missing - "Where's the meat?"


For dessert, we had fresh sliced pineapple.  And chocolate, obviously.


Then we went shopping and I found a new hat at REI!


I love it!  It's perfect for protecting my face from the sun, which helps prevent additional freckles.

I wear them for sun protection mostly, but sometimes they are fun just for fashion!
